Sushi maestro Mr. Makoto ‘Sam’ Saito has been honing his skills for over 20 years, from his hometown of Tokyo to Sydney, Rome, Tel Aviv, and Kuala Lumpur.

Located on the ground floor of the Four Seasons Hotel, the atmosphere is relaxed and inviting and full of charm.

Hibiki’s elegant attention to detail elegant to every facet of the experience here, from the food to the tableware.

The sushi served here is more than just fish on rice. The dining experience here is enriched by the interaction with Chef Sam, a friendly Chef Sam speaks fluent English, a rarity among Japanese chefs in Malaysia.

Regarding the food, Sushi Hibiki prepared some special menu for this event.

It’s consists of 10 foods menu, those foods are fine foods by the skilled Chefs, besides they were paired with the sake we had prepared, and we served our guests to pair each dish with a different sake.

Every dishes went well with the sake, and our guests were very satisfied.

Tasting Note

Using domestically produced yuzu 7 pieces in 720ml generously, the sake is finished with a slightly sweet taste while fully drawing out the acidity and flavor peculiar to yuzu.

Tasting Note

Although it is traditionally prepared with raw liquor, it is a rich and mellow raw sake that is full of sweetness and umami. The rich taste like ripe fruit and the aroma that bursts when you put it in your mouth are impressive.

Tasting Note

“Pleasure” means exciting for new. Junmai Ginjo Sake with a pleasant taste that has a mellow sweet aroma and a soft umami. The Ginjo scent that makes you feel the bud of spring and the light taste that is unique to 15% alcohol are attractive.

Tasting Note

It features a fluffy Ginjo aroma that complements the dishes and a rounded sweetness. The deep taste that taraps the umami of rice is the best sake for a relaxing evening drink.

Using 7 kinds of fruits and special spirits of yuzu and lemon are added to add lightness to the aftertaste. A luxurious liqueur with an irresistible texture of crushed oranges and grate apples.

Tasting Note

Using 7 pieces of plum fruit for 720ml. Plum fresh is blended with sake-based umeshu to create a flesh-filled umeshu, It is characterized by its soft and mellow taste and rich taste.

Using 14 pieces of mandarin oranges generously. Enjoy not only the refreshing aroma and taste of mandarin oranges, but also the light and mysterious texture of the mashing dance in your mouth.

Umenoyado Aragoshi Ringo

Raw material: apple, sake, sugar, vitamin C / Alc: 7% / Serving: On the rock / Region: Nara

Tasting Note

Using domestically produced apple 5 pieces in 720ml generously, a fruit juice- like liqueur filled with domestic apple juice and pulp. We used both grated apples and diced apples luxuriously to bring out the natural sweetness and freshness of apples.

Umenoyado Aragoshi Lemon

Raw material: lemon, sake, sugar, citric acid / Alc: 10% / Serving: Hot water or with soda / Region: Nara

Tasting Note

Use local lemons for about 4 pieces in 720ml. By adding in-house manufactured lemon flavored liquor, lemon crush, and domestic honey, we have achieved a full-fledged aroma and rich sweetness.
