HAKKAISAN: Signature Niigata style is known as tanrei karakuchi, which is crisp, clean and dry, achieved by slow, low-temperature fermentation.

By aging at a low temperature of around 3 degrees Celsius for 8years, we were able to create a high-quality aged sake with a smooth and elegant flavor while retaining a light taste.
