|KATSUYAMA BREWERY:
KATSUYAMA BREWERY is located in Miyagi Prefecture.
Katsuyama Brewery was founded in 1688 in Sendai, the castle town of the Date family, and functioned as the official Sake brewery of the Sendai clan during the feudal era.
The respect for the Date family has been carried over to the present day and is used in the design of the sake bottle.
Here is the 4 unique points of the KATSUYAMA BREWERY.
1, Pursuing Sake quality in line with trends– The company explores the essence of fermentation culture without being bound by the framework of “Sake with a Specific Name(=特定名称酒)”.
2, Installation of centrifugal separator– With the installation of centrifugal separator, Katsuyama’s signature brand “Diamond Akatsuki 暁” was born. By extracting the essence of high purity, a full, clear and beautiful Sake different from previous brands was created.
3, Preparing Sake– For Sake, Moromi is placed in a tank and allowed to ferment. At Katsuyama Sake Brewery, only one tank of Sake is brewed per week, allowing the Moromi to ferment slowly and soundly. To achieve this, we take the utmost care in the management of the Moromi, temperature control, and timing of the squeezing, This ensures that the quality of the Sake is exactly as intended.
4, Boiling and Preserving– Through creative efforts, the process from heating to storage has been shortened to maintain the freshness of the Sake. After fire-quenching, the Sake is stored in a refrigerator at -5℃ to maintain its quality until just before shipping.
